US: The Ace Hotel in Chicago’s Fulton Market will open the City Mouse restaurant next month.

Chef Pat Sheerin's restaurant will debut with brunch service when the hotel opens on July 1. Sheerin is hopeful to then launch full service - including dinner and cocktails - on July 12. Caitlin Laman, formerly of Mezcaleria Las Flores, will be beverage director.

The 159-room hotel at 311 N. Morgan St will also feature Chicago's second Stumptown Coffee cafe.

The restaurant's name comes from The City Mouse and the Country Mouse, one of Aesop's Fables.
