Burley Manor launches "15-mile lunch" menu

UK: Burley Manor in the New Forest has introduced a lunch menu which only uses ingredients sourced within a 15-mile radius.

The new menu, launched this month, shows guests where each ingredient was sourced using a visual menu map.

The chefs at Burley Manor worked closely with their local suppliers to create the menu, with the initiative spearheaded by executive head chef Ben Johnson.

Johnson, said: "Along with the whole team at Burley Manor, I strive to support local businesses and show our commitment to sustainability. Our new 15-mile menu is created depending on what is available at the time of year, within a 15-mile radius or less, straight from land to plate. The menu is true to the seasons and will vary depending on what our supplier provides for us, influenced by the south of England."

Burley Manor is part of the New Forest Hotels Group, and has 40 guest rooms.
