Merchie to take Yorkshire hotel back to its original identity

UK: Charles Merchie has purchased The White Swan in Middleham and is returning it back into its previous name, The Wensleydale Hotel

Merchie, the former general manager at Swinton Park, the Feversham Arms and Wood Hall Hotel, will reopen the property by mid-April, after a modernisation of the public areas, adding two junior suites and a family room. A south-facing terrace will offer relaxed, all-day al fresco dining.
 
Merchie said: "I've got big plans for the next 12 months at The Wensleydale; not only the aesthetic transformations which will increase our capacity for overnight and dining guests, but we will also be transforming the restaurant - to be named The Tack Room - and offering a new concept of traditional continental and British cuisine, with artisan charcuterie and bread specialities.
 
"When my wife, Fiona, and I first started looking for a hotel, we went back to Fiona's roots and explored the beautiful Moors and the Dales, which is where we stumbled upon The White Swan up for sale. It matched our criteria perfectly; a medium sized hotel with a restaurant in a great location with loads of potential - we can't wait to officially relaunch as The Wensleydale in a few weeks' time," he added.
 
The Tack Room restaurant will have its own identity in the defined style of the local equestrian community; a nod to the well-known and respected horse trainers in the area.

NatWest bank helped to provide funding support for the purchase of The Wensleydale. Rob Utton, relationship manager at Natwest, said: "It's an exciting time for Charles, Fiona and their family as they embark on the opening of The Wensleydale Hotel. Charles has a strong background in hotel management, and we wish them all every success for the future."
 
Merchie added: "We will be offering traditional specialities from across the Western and Mediterranean regions in our restaurant; from Norwegian cured fish to Hungarian Goulash and Cassoulet, we will take your taste buds on a journey!"
 
Phase one of the renovations will be complete in time for the summer season, with phase two to begin over autumn and winter this year. The second stage of renovations will include adding a thermal spa suite and creating a new duplex of junior suites.
