Kimpton Shorebreak Resort announces culinary team with revamped menu

US: Eric Kramer is the new director of food and beverage, Tanner Johnson the beverage manager, and Gilbert Laurie the executive chef at restaurant, Pacific Hideaway.

Kramer has over two decades of experience in hospitality management, previously serving as director of operations and manager partner of Bounce Sporting Club in Chicago.

He said: "I'm thrilled to be joining the culinary team at Kimpton Shorebreak Resort. Pacific Hideaway is known for inventive cocktails and fresh flavours of the Pacific, Latin and Asian cultures, and I look forward to working with the culinary team to expand on this vision with our revitalised menus. I'm confident my experience in management and team development will be an asset to the team and aid in the growth of an already successful resort".

Johnson has over a decade of food and beverage experience in California and Arizona, and will be responsible for designing specialty cocktail menus.

Laurie has been part of the Pacific Hideaway culinary team for two years, previously executive sous chef, and will be responsible for introducing new food offerings that capitalise on trending ingredients.

"We look forward to offering our guests and locals new vibrant flavours and fresh cocktail options, while staying true to Pacific Hideaway's vision. Latest additions to the brunch and dinner menus at Pacific Hideaway include Breakfast Tacos, Burrata Salad and Grandma's Chilaquiles, as well as Seared Diver Scallops, Sugarcane Beef Tenderloin, and Crispy Pork Belly.

Pacific Hideaway is a modern American restaurant taking influence from the Pacific flavours of Southeast Asia and Latin America. Statement pieces include a large hand-carved bar that depicts ocean waves, and patio and lounge offering views of Huntington Beach Pier and the sea.

Kimpton Shorebreak Resort is located in the heart of Huntington Beach in California. It comprises 157 bedrooms featuring 20 suites, ocean views, and in-room amenities such as yoga mats and record players.
