US: Frank Ruta and Aggie Chin have been appointed head chef and pastry chef respectively at the Capella Washington DC hotel.

US: Frank Ruta and Aggie Chin have been appointed head chef and pastry chef respectively at the Capella Washington DC hotel.

Ruta, the former chef and owner of the Palena restaurant in Cleveland Park, took the post after being assured he would have "complete control over menus and kitchen staff" at the boutique hotel in Georgetown.

Ruta wants to make the hotel's Grill Room and Rye Bar "more accessible to local diners" by lowering prices and broadening the menus beyond steaks and seafood.

He says: "It's a hotel dining room but we're trying to make it not a hotel dining room. We might do some other stuff. I don't think you can predict how things are going to evolve."

He suggested his signature truffled cheeseburger and roast chicken could make appearances but doesn't anticipate rolling out new menus until February 2015.
